Any ideas for a nice meal to fix my husband after a hectic week at work?

My husband is having a hectic week at work and I would like to do something nice and relaxing for him Friday night. Nothing TOO fancy, but may be little pampering would be nice.Any ideas for a nice meal to fix my husband after a hectic week at work?
Bar-b-q him something, have some beer ready for him and make him his favorite desert. Then while he's having a relaxing shower later, give him something *else* that will make him forget all his stress.Any ideas for a nice meal to fix my husband after a hectic week at work?

This is a roast chicken that is one of my favorite go-to things I make all the time.





The Ingredients:





Whole chicken


Lemons


Oilve Oil


Garlic


Salt and pepper


Rosemary





At home (this really is easy, I promise. If I can do this, then anyone can), get out a big roasting pan that will hold the chicken and the veggies. Heat your oven to 400.





Wash, cut up and peel the veggies and put them in the pan. Give them a slurp of olive oil and some salt and pepper, and add a few small pieces of rosemary.





Rinse and pat the chicken dry, and get the giblets out of the cavity. Save them or toss them - whichever works. I usually don't use them, but anyway, after the chicken is clean and dry, get your hands under the skin on the breast and the thighs to pull it away a little. Give the meat under the skin a little slurp of olive oil and a little salt and pepper, and put a few small pieces of rosemary under the skin. Cut half of the lemon in really thin slices and put a few slices under the breast skin and the thigh skin. You'll be using the rest of the lemon for the juice.





Inside the cavity, give that a nice slurp of olive oil, and squeeze some lemon juice into it and throw in a few pinches of salt and pepper. Cut up a few cloves of garlic (into BIG PIECES - you don't even need to peel it) and put them into the cavity with a few pieces of cut up rosemary. Also, on the outside of the chicken, give that a nice slurp of olive oil, too (you'll probably use about 1/3 a cup between the inside cavity, the outside skin and under the skin, but the flavor is wonderful and it also keeps everything moist.) After squeezing the lemon juice on the outside of the skin, out the lemon in the inside cavity with the garlic and rosemary.





Bake the chicken for about 90 minutes and give it a poke with a thermometer to make sure it's at temperature before you take it out and let it rest a few minutes before you carve it.





I do this exact recipe about once a week, and it is D I V I N E. The chicken is moist to the point of being messy because of the oil, but it's not greasy or overly heavy because of the rosemary and lemon. The garlic and rosemary with the lemons are a wonderful combination that also lightens things up.





The prep time is really fast - like maybe 10 min from start to putting it in the oven.





That's ALL you need for amazing chicken, hon. Side dishes are whatever he likes and are also easy to do - you're limitless.

P.S. I don't cover the chicken and cook it breast side up, and after the first hour, take it out and turn it over so the skin on the bottom gets nice and browned, too. Flipping it is NOT that hard - just get 2 really long cooking or grilling forks, and be steady. The skin in this chicken is aaaaaaaaaamazing.





P.P.S. The house will smell like a restaurant, too :D

and if you bake a cake or your favorite sweets in the oven right before he gets home the house will fill up with that warm swweeeet smell and maybe give him a good back rub thats good for reliving tension you may even get lucky if ya know what i mean...
Chicken Parmesan, Pasta with olive oil, tomatoes and basil, broccoli and Chardonnay if you drink. Get some strawberries and chocolate for dipping strawberries and have them arranged nicely on a plate for dessert. Don't forget to put candles on the table and have soft music playing in the background. G/L
How about some grilled herbed chicken, some pasta salad, and baked potatoes? You could grill while he relaxes. Maybe ice cream sundaes for dessert? I bet he'd appreciate that. You sound like a very caring woman!
I would put some stakes on the barbeque grill and have a nice salad while he relaxes in a reclining chair in the shade listening to his favorite music with a nice cold beverage.
