My husband brought some swordfish steaks home. Any good recipes?

Anything without garlic would be good. I'm pregnant and I can't stand the smell of garlic. Thanks!My husband brought some swordfish steaks home. Any good recipes?
Keep it simple with swordfish.......treat it like a steak (which, it actually is, a swordfish steak) I do mine in olive oil/butter, lightly pan fry with some lemon juice and salt and pepper and DON'T OVER COOK IT!!!! That's the biggest mistake you can make with fish.......everyone seems to overcook fish and pork these days....Enjoy!!

Citrus Swordfish With Citrus Salsa





';A delicious fish with a summery flavor! Preparation Time: 25 minutes. This recipe is from The WEBB Cooks, articles and recipes by Robyn Webb, courtesy of the American Diabetes Association.';








INGREDIENTS


1 orange, peeled, sectioned, and cut into bite-size


1/2 cup canned pineapple chunks, undrained


1/4 cup diced fresh mango


2 jalapeno peppers, seeded and minced


3 tablespoons orange juice


1 tablespoon diced red bell pepper


2 teaspoons white sugar


1 tablespoon chopped fresh cilantro


1/2 cup fresh orange juice


1 tablespoon olive oil


1/4 teaspoon cayenne pepper


1 tablespoon pineapple juice concentrate, thawed


1 1/2 pounds swordfish steaks





DIRECTIONS





1. Make the salsa: In a medium-size bowl, combine oranges, pineapple chunks, mango, minced jalapenos, 3 tablespoons orange juice, diced red bell pepper, sugar, and cilantro. Mix well, and refrigerate covered.





2. In a non-reactive bowl, mix 1/2 cup orange juice, olive oil, cayenne pepper, and pineapple juice concentrate. Place swordfish steaks in bowl, and turn to coat well. Marinate the swordfish in the mixture for 30 minutes.





3. Prepare an outside grill with oiled rack set 6 inches from the heat source. On a gas grill, set the heat to medium-high.





4. Grill the swordfish on each side for a total time of about 12 to 15 minutes, until opaque in the center. Serve the grilled fish with the salsa.





E-Z Marinated Swordfish





';The tantalizing marinade teams cayenne, hot pepper sauce, ginger and lime juice to give your tastebuds a good 'kicking'!';





INGREDIENTS


3 tablespoons fresh lime juice


2 tablespoons white wine vinegar


1 teaspoon salt


1/8 teaspoon freshly ground black pepper


1/4 teaspoon ground ginger


1/4 teaspoon dried basil


1/8 teaspoon dried thyme


1/8 teaspoon dried parsley


1 teaspoon hot pepper sauce


1 pinch cayenne pepper


3 tablespoons vegetable oil


2 fresh swordfish fillets





DIRECTIONS


1. In a medium bowl, stir together the lime juice, white wine vinegar, salt, pepper, ginger, basil, thyme, parsley, hot pepper sauce, cayenne pepper, and oil. Place the fish fillets into the bowl, cover, and marinate for at least 10 minutes, or preferably up to 3 hours.





2. Preheat broiler or an outdoor grill for high heat.





3. Place fish onto the grill or a broiling pan. Discard marinade. Grill or broil fish about five minutes each side, until the fish flakes easily with a fork.
Swordfish is my husbands favorite fish. I generally barbque it, but then we live in So Cal, so we grill all the time. I grill it and use it in fish tacos with some cabbage, tartar sauce, cilantro and chopped tomatos. (just grilled with olive oil, salt and pepper - do not overcook!)


Another really easy way to cook it is to broil the fish. I like to smear it with mayo, add a little pepper and salt and then broil. If the fish is about an inch thick, about 7 minutes a side should do it. The mayo really helps to keep the fish moist.

Well, this does contain a clove of garlic, but you really won't smell it because you won't be cooking with it, just amkeing pesto. Also try the jarred preminced garlic so it won't be on your hands


Swordfish with Citrus Pesto

Citrus pesto:


1 bunch fresh basil, stemmed (about 3 cups)


1/2 cup pine nuts, toasted


1 clove garlic


1 lemon, zested and juiced


1 orange, zested and juiced


1/2 teaspoon salt


1/2 teaspoon freshly ground black pepper


1/2 cup extra-virgin olive oil


1 cup grated Parmesan


Swordfish:


4 (6-ounce) swordfish steaks


Extra-virgin olive oil


Salt and freshly ground black pepper








Blend the basil, pine nuts, garlic, zests, juices, salt, and pepper in a food processor until the mixture is finely chopped. With the machine running, gradually add the olive oil until the mixture is smooth and creamy. Transfer to a bowl and stir in the Parmesan.


Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush both sides of the swordfish fillets with olive oil and season with salt and pepper. Grill the swordfish about 3 to 4 minutes on each side for a 1-inch thick fillet.





Transfer the grilled swordfish to serving plates, top with the citrus pesto, and serve.

Here's a delicious recipe. I left the garlic in the ingredients in case you'd like to add it back in after you've had your baby (congratulations!).





Spicy Grilled Swordfish





Your Ingredients: (serves 4)





Salsa:





1 medium navel orange, peeled, sectioned, and diced small


1 medium mango, peeled and diced small


1 (8-ounce) can crushed pineapple, undrained


2 jalape帽o peppers, seeded and minced


2 cloves fresh garlic, minced (just leave out)


2 T freshly squeezed orange juice


2 T freshly squeezed lime juice


3 T minced red onion


1 T granulated sugar


1 T minced fresh cilantro





Marinade:





2 T olive oil


1/2-cup freshly squeezed orange juice


1/2-tsp cayenne pepper


2 T pineapple juice


4 swordfish steaks


lime, cut into wedges





IN a glass bowl, combine the salsa ingredients and blend well. Cover and refrigerate overnight.





THE next day, whisk together the olive oil, orange juice, cayenne pepper, and pineapple juice in a medium bowl.





PLACE the swordfish steaks in a large Ziploc bag and pour in the marinade. Seal and shake the bag gently to coat the steaks. Allow steaks to marinate for 40 minutes.





MEANWHILE, fire up your grill to medium-high heat. Make sure that the grill rack is at least 4 to 6 inches above the coals. Brush the grill rack with oil to prevent sticking.





GRILL the marinated swordfish steaks about 6 to 7 minutes on each side or until flaky.





SERVE on attractive plates and top with salsa. Garnish with lime wedges and a sprinkling of fresh cilantro leaves.
